Experiment with new combinations of vegetables, grains, spices and teas at the Eating Healthy in Winter Kitchen Classes, hosted by Cornell Cooperative Extension of Ulster County’s nutrition educator Janie Greenwald, held Saturdays, 10 a.m.-noon, through April, with the next class, Risotto, on Feb. 23, at Cornell Cooperative Extension, 232 Plaza Road, Kingston (Hannaford Plaza). Other upcoming classes include: Cajun and Creole, March 2; Knife Skills, March 23; South Indian Home Cooking, special time, 6-9 p.m. April 10 and “Ramp” Up Your Spring on April 24. Sign up for more than one class or with more than one person and receive a discounted rate of $30 a person per class, otherwise $35 a person per class.
